Millie Mantle

With extensive experience in Hospitality. She is completely at home as the Wedding & Events Planner for The Outbuildings. Her passion for ensuring every couple’s wedding day goes is unique, and runs without a hitch has resulted in lot’s of very happy newlyweds, and a very memorable day to remember!

Millie has two dogs Squid & Oyster, who you may see around the grounds (behaving themselves of course!) In her spare time Millie enjoys walking and finding new spots to explore on Anglesey – including places to try out her new found love of paddle boarding, with Squid even joining in at times! She is a complete foodie and loves cooking, especially baking, and lives by The Olive magazine..those with a passion for cooking must have a read!

Emma Leslie

Emma is our newest member of the team. Having spent most of her life on Anglesey, she loves walking and spending time on the water. In her own time you can find her exploring new places with her camera.


Jackie Davies

The wonderful Jackie ensures your room is always sparkling ready for your arrival. She may share her huge knowledge of Anglesey with you over Breakfast helping you find somewhere new to visit. But don’t blink, or you will miss her…..Jackie moves around The Outbuildings at lightning pace, and always with a smile!

Keiron Slater

Keiron’s childhood dream was to be a fireman, fortunately these skills haven’t been called for at The Outbuildings! He loves the views of Snowdonia that he can enjoy from home and The Outbuildings, as well as meeting and chatting with guests.


Lucy Knapp

Outside of school and work , she loves to spend time outdoors, riding horses and exploring new beaches. Her favourite thing about working at The Outbuildings is meeting new people and learning more about new food.


Keenan is currently studying Sports performance and excellence in Coleg Menai. His long life achievement is to join the Royal Marines. In his spare time you will either see him on the football pitch playing for Llangefni or on the rugby field. You can’t miss him at The Outbuildings because he constantly has the big smile on his face!

Tom Innes

Outside of work, Tom plays football for Bangor u19s. Tom is also a very keen fishermen. His favorite food is sweet and sour chicken. He is enjoying his studies at Coleg Menai where he is doing Sports Performance & Excellence. Tom hopes to join the army in the near future.




Born and bred on Anglesey, Wayne’s passion for cooking began at an early age. He is passionate and enthusiastic, and likes to bring his fun personality into his dishes. His menus are always catered for everybody’s needs, and Wayne will always help and offer suggestions when he can. He believes in supporting local small businesses, and therefore thrives on using as much local produce that Anglesey has to offer.
In his spare time, Wayne enjoys exploring the island; from coastal walks to eating out and discovering new tastes of Anglesey. He also enjoys gardening so be sure to see him in our herb garden picking fresh herbs for his dishes.
Wayne is a fun member of the team, he’s sure to put a smile on anyone’s face.

Rod has been a Chef for 20 years and, over the course of time, has developed a passion for creating dishes sourced from local produce. His motto is you only get one chance to make a great first impression. This is something that he abides by, both personally and professionally. He is also a keen golfer and enjoys touring the many golf courses that Anglesey has to offer.
